Just made up two new batches of lacto-fermented beverages. I am trying the ginger ale this time 'cause I love ginger ale, as well as another batch of lemon/lime. Hope it turns out great! Our last batch of lemon/lime ade was a bit strong and bitter, still very good, but it just had kind of an edge to it that the first batch didn't have. Stinks too, because I wanted to give Tim and Abbie some for Christmas and it just wasn't as good as the first batch; just not as smooth. I've about decided that the problem was way too much fruit for the size I was making, plus I used the juicer, which really juices well, but I find that at times citrus fruit tastes bitter when put through it...maybe too much pith or something. So for this batch I used a regular little manual juicer and less fruit. I think it will turn out much better. These will sit out for 2-3 days, then be refrigerated to rest for a couple of weeks to a month, then we'll see how they are. Love this stuff! Love lacto-fermentation! Probiotics at their best!
Cool. Although I'm not a fan of ginger ale, Faith has been experimenting with fermented beverages lately. We have a regular rotation of kombucha fermenting in the pantry with a SCOBY that had it's beginnings at one of the fine South Austin food trailers, Hey Cupcake! (heycupcake.com).

ReplyDeleteI've been wanting to try lacto-fermentation...next time I make yogurt I'll have to start a batch of ginger ale or similar. Love science experiments on the kitchen!
